COLORFUL MASHED POTATOES

Cover 10 peeled potatoes with salty boiling water and boil, covered with a lid, until ready. Filter the water, mash the potatoes with a wooden pestle, add 1 cup of hot milk, 2 tablespoons of butter and beat up until fluffy. Divide the mashed potatoes into 3 parts. Peel, boil and dice 8 potatoes. Set aside. Boil 4 eggs, chop and mix them with the potatoes. Melt 2 tablespoons of butter and dress the dish. You can also add cream. Top with chopped parsley or dill greens.

POTATOES WITH WHITE SAUCE AND ONIONS

Boil 6 potatoes with their skin on. Peel and cut them into wedges. Set aside. Make a thick sauce from a meat broth: slice 2 onions, fry them in butter, add 1 tablespoon of flour, 1 cup of the meat broth and bring to a boil. Pour the sauce over the potatoes, add salt, pepper to taste and boil for 10 minutes. Sprinkle with chopped parsley greens before serving.

MASHED POTATOES WITH LEGUMES

Sort, wash, soak and boil 300 grams of legumes (kidney beans, split peas, beans). Add 4 boiled potatoes, 1 cup of hot milk to the legumes while they are hot. Serve with fat, sprinkle with greens.
POTATOES WITH PORK FAT

Boil 5 potatoes with their skin on. Peel and cut them into pieces. Fry 1 chopped onion in oil. When it colors golden brown, add 100 grams of diced salted pork fat and fry stirring. Add 1 tablespoon of flour and 1 tablespoon of tomato paste. Add the potatoes to the sauce in 10-15 minutes and keep cooking for 10 minutes more.

POTATOES WITH OLIVES

Cut 5 peeled and washed potatoes into 4 parts. Soak the olives in warm water for 2 hours. Fry 1 chopped onion and 1 tablespoon of flour with chopped greens in oil separately. Add 1 tablespoon of tomato paste and some water. Stew the potatoes with the olives in this sauce.

Fry 1 chopped onion; add 1 tablespoon of flour, red ground pepper and 1 cup of boiling water. Add 5 peeled potatoes, cut into big pieces, to this mixture and boil for 20 minutes, add salt, 1 teaspoon of vinegar, 2 tablespoons of sour cream, chopped greens and bring to a boil.
