POTATO DUMPLINGS WITH MUSHROOMS
Wash, peel and cut 400 grams of fresh mushrooms into thin pieces. Boil them in a small amount of water. Peel 1 onion, slice and fry it until golden. Soak 300 grams of wheat bread in water or milk, squeeze it out. Grate and mix the boiled mushrooms (without the liquid), the onion and the wheat bread, add salt and pepper. If the filling is too watery, add bread-crumbs. Make the potato dough using the recipe above and make dumplings with the mushroom filling. Boil, dish, dress the dumplings with melted butter mixed with fried bread-crumbs or pork crisps and drippings.
POTATO MEAT-BALLS
Boil and mash 10 potatoes. Add flour, eggs, salt and mix well. Make balls from the dough and fill them with meat. To make the minced meat mince boiled meat, fry it in butter a little, add a sautéed onion, pepper, salt and stir. Drop the meat-balls into the boiling salty water, boil, put in a colander to drain them. You can dress the meat-balls with melted butter, tomato or sour cream sauce. FOR DOUGH: 10 potatoes, ¾ cup of flour, 2 eggs, pepper, 1 cup of sauce, salt. FOR MINCED MEAT: 300 grams of boiled meat, 1 onion, 1 tablespoon of butter, pepper, salt.
POTATO SAUSAGES WITH SAUCE
Boil 5 potatoes with their skin on, peel and mash them. Add 2 tablespoons of flour and make stiff dough. Add salt and pepper. Form little sausages from the dough and boil them in salty water. Make the sauce: fry 1 chopped onion in melted fat, add salt, 2 tablespoons of tomato paste, a little water and cook until the onion softens. Pour the sauce over the potato sausages, top with grated cheese and serve hot.

POTATO ROLLS IN A CZECH STYLE
Cool and mash boiled potatoes. Add flour, starch, eggs, nutmegs and mix. Roll out the dough 0,5 cm thick, cut it into 8 cm wide and 5 cm long strips.
Cover them with an even layer of the minced-meat. Roll up every strip and seal. Drop the rolls in salty water and boil over low heat for 20 minutes. Put them in a colander to filter the water and dish. Fry bread-crumbs in butter and sprinkle the rolls with them. You can use meat or mushrooms as a filling. To make minced meat mince beef or lean pork and fry a little. Add a chopped onion and fry again. You can use dried ceps, having soaked them in water in advance for 2-3 hours. Wash, boil, chop and fry the mushrooms with onions. FOR DOUGH: 8 potatoes, 0,5 cup of flour, 0,5 cup of starch, 2 eggs, nutmegs, 2 tablespoons of bread-crumbs, butter, salt. FOR MINCED MEAT: 250 grams of meat, 1 onion, 1 tablespoon of fat, salt. FOR MUSHROOM FILLING: 50 grams of dried mushrooms, 1 onion, 1 tablespoon of fat, salt.
FLUFFY DUMPLINGS
Peel, grate and squeeze 8 potatoes. Pour in 0,5 cup of boiling milk. Boil 500 grams of fresh mushrooms, chop, fry, add chopped parsley or dill greens, salt and stir with the grated potatoes. Make dumplings from the dough and drop them in the boiling salty water. Put them in a colander to filter the water and serve with spicy grated cheese or fried salty pork fat.
POTATOES WITH WINE
Make the sauce: put 2 tablespoons of melted butter, pepper, salt, chopped parsley, 1 onion, 1 tablespoon of flour in a pan with a thick bottom. Fry the ingredients, pour in 1 cup of broth, 1 cup of dry wine and cook until thick. Boil 6 potatoes separately. Cut them into pieces and dress with the sauce.
